Makes 1 large round loaf Preparation Time: 10 minutes Cooking Time: 60 minutes
4 cups flour 1 teaspoon salt 1 teaspoon baking powder 1 teaspoon baking soda 1 1/2- 2 cups raisins 1/3 cup plus 2 tsps. sugar for sprinkling dough 1 1/2 cups buttermilk 2 eggs 1/3 cup butter or shortening, at room temp.
1.) Preheat the oven to 325 degrees.
2.) Place flour, salt, baking soda, raisins, and 1/3 cup sugar in a large bowl and mix gently with a wooden spoon until well combined. Add the buttermilk, eggs, and butter. Mix and knead the bread until you have a slightly sticky dough. This should take about three minutes. Form the dough into a ball and place it in a greased, round metal baking dish. Using a sharp knife, cut an X about 1/4 inch deep into the dough. Sprinkle the dough with the remaining 2 teaspoons of sugar and bake in a preheated oven for 55-60 minutes. Cool for 15 minutes, then immediately cover the bread with aluminum foil. I think covering the soda bread after it comes out of the oven was one of Grandma's secrets for keeping her bread so moist. Serve it hot, just warm or at room temperature.
